Candied grapefruit peel from How to Cook Everything: Simple Recipes for Great Food (page 680) by Mark Bittman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I like these! I made scones out of them, which was delicious. Would also add them to cereal, granola, yogurt, salads. I used the leftover grapefruit-flavored simple syrup to make soda drinks with club soda. I think removing as much of the pith as possible and boiling them three times is key to making them less bitter. They get better as they dry out over 1-2 days.
