    Living in the Upper Midwest (US), I’ve always been intrigued by this Southern (US) dish that I would see on food programs. The thought came to me one night, I opened up EYB, and found that I had all of the ingredients at home. And from the head note, I’m glad to know this recipe is from an Atlanta chef. I always like a higher vegetable/rice ratio to meat, which this recipe easily accommodated. I may leave out the extra oil in the beginning to sauté the chicken because my chicken has a nice amount of delicious fat in it. This dish is delicious, especially served with hot sauce.
