Great lakes "chowda" from Heartland: The Cookbook by Judith Fertig

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Packed with flavor and easy to prepare, this is a hearty dish that fills you up on a cold night and impressive enough for guests. For true Midwestern flavor, I would stick with fresh corn over frozen and smoked whitefish over fresh. The bacon is traditional but a healthier and equally flavorful substitute is butter accompanied by 1-2 tsp porcini powder, a dash or two of soy sauce, and a few drops of liquid smoke.
