    This is very good and easily adaptable. I used sourdough bread and replaced the spinach with amaranth. One could definitely use chard or even beet greens.

    For my taste, this was just so-so. Maybe it was because my expectation was more, being it was a combo of spinach and feta which I ordinarily absolutely love. I did make the rye soda bread prior to this so I could use some in this recipe. The bread was very good, but it also has strong flavors that I think maybe overwhelmed this dish. I ate a portion at room temperature (based on a review here), splashed with Crystal hot sauce. I've put remaining in freezer and will try later reheated and eat hot -- maybe that will be better.

    I didn't love this, but having a funny moment with eggs which could be why. I used a 20cm round dutch oven and think it would have been nicer in a larger flatter dish - the middle was soggy (which is maybe how it should be - I don't know) the crispy top parts were nice. If there is a next time I will add some toasted pine nuts and chilli flakes! Mr VT approved surprising himself.

    This made a nice vegetarian brunch with the familiar combo of spinach and feta. Thumbs up from the picky kids!

    Absolutely great- nothing to improve on if you like the flavors of spinach and feta. Big hit at Mother's Day brunch.

    One of the things I love about stratas is that they can be completely prepped the night before then just popped in the oven before your brunch. This has my favorite ingredients combination for a strata - spinach and feta. The whole wheat bread made it feel healthy and I liked the touch of rubbing lemon zest around the dish - the side crusts had a nice zing. I had some straight from the oven, some lukewarm and some cold. I think lukewarm is best or at least not piping hot from the oven.
