    We loved this side dish with grilled salmon and hamburgers over Memorial Day. It was nice to have a lighter potato salad. I didn’t include the tofu since I was serving it with proteins, but I’m sure it would be great.

    Makes a great side dish, a great alternative to boring potatoes and a way to sneak more veggies into dinner. Next day the oil-based dressing does harden, so reheating a little is necessary. Best same day.
