    These are great whole-grain pancakes - mild-flavored and a small amount of texture from the cornmeal. The cherry sauce was very nice, too - its clove flavor and deep red color made me think of winter holidays! Sauce kept well in the refrigerator over a few days so it can definitely be made ahead of time. The orange zest I used gave a bit of a bitter edge to the sauce - it might have been bad luck with the particular orange I had or I might want to dial back the amount of zest in the future even though the orange flavor was otherwise really nice.
