    Honey glazed duck with ginger and pink grapefruit - This recipe is included in Books for Cooks Favorite Recipes from Books 1, 2 and 3 at page 42. It is described as a special dish for special times. I made this dish last night for dinner, substituting confit'd duck legs and serving it over a combination of iceberg lettuce and a variety of herbs. The salad is quite delicious. But the dressing, which requires caramelizing sugar as one of its steps, is a bit labor intensive for the results. I might seek out an easier dressing if I was to attempt this salad a second time.
