    I made this many times when my kids were vegetarian. Seeing the note from Joyous put it back on my radar. Unfortunately the link did not work for me tonight.

    A favorite in our house. Can use shredded cabbage and carrots instead of coleslaw mix, cotija cheese instead of feta, and add avocado. With mexican rice, this is a complete protein meal.
