    I completely ignored the instructions for making a buckwheat galettes and went with the method a cooking instructor from Brittany taught me ... the one her Mother taught her when she was four. Yes, a galette makes a great base for a simple blue cheese and fruit on greens lunch salad. It was so good I had to try it again on a socca base. Well, I read the instructions for the "garbanzo flour crepes" and went elsewhere for a thin socca recipes. Yes, it also made a great base for the salad. These have become a summer staple with endless variations on the salad and on the crepe.
