    Slight cheat on this one as I was out of fresh herbs and had some cucumbers to use up. Pepin to the rescue it seems!!! Even with dried herbs this was still quite good. Nice balance of sweet/salty/tartness with the lovely crisp texture of the cucumbers. Easy and tasty!
