    Can substitute Italian Castellucio lentils or butter beans or chickpeas for Puy lentils.

    Good flavours. I wasn't convinced by the benefit of cooking the lentils "as if making a risotto" - next time I would make the dish in a saucepan rather than a frying pan, and add more liquid from the start rather than one ladleful at a time.
