    A winner. Another recipe from this special diet cookbook that doesn’t taste special diet. We liked the turkey bacon in this- made the whole salad pop with flavor. Changes: I didn’t have red onions so substituted 1/2 cup of a yellow one. I had some leftover red cabbage that I wanted to use up and added a 1/2 cup of that, chopped. We thought the cabbage improved the overall flavor. The water chestnuts provide an interesting and unusual crunch. I used florets from broccoli heads for my slaw. Will repeat.
