    Can substitute borlotti, pinto, or cranberry beans for lamon beans, and slab bacon for smoked pancetta. Requires 8 hours preparation time for the beans.

    Not a “wow” dish but a good hearty winter soup. I used bacon and Rancho Gordo cranberry beans. This is a good idea if you find yourself with some leftover sauerkraut.
