    So delicious! Recently found out my HA1c level is elevated, and that motivated me to buy this book. This was my first entree from the book and you’d never know it was a special diet recipe. Husband loved it. Tasted very much like the filling for a particularly flavorful taco. I may add a corn tortilla as the base next time. Doubling the Coleslaw would make it even better. Served with Spanish - style rice (ATK).
