    This is a great recipe if you want Cuban-style eggs. The "Habaneros" in the title is reflective of the word Havana, not that the dish contains habanero peppers! Eggs are baked in a ramekin over sofrito (onions, red and green peppers, garlic, tomatoes, cumin and wine), and topped off with the same. I used 4-4.5" ramekins, and managed to use all the sofrito for 3 servings. Unfortunately, I checked the dish at 15 minutes, and decided to pull it out at 20, which resulted in well-done eggs. Next time I will pull them out at 15, as I don't mind runny yolks. Served this with Cuban-Style Black Beans and steamed rice. Would also include some toasted bread next time, to help sop up that runny yolk!
