    Pg. 80 This makes a lovely little chicken braise. I made a few small modifications to the ingredients and the technique, which likely increased the calories a little but also made for a much tastier dish. I used skin on bone in thighs, which I rendered in the braiser for a few minutes. I poured off most of the fat that accumulated and proceeded to brown the aromatics and mushrooms. When the recipe calls for 20 minutes covered I actually popped it into a 400 degree oven to avoid the chicken skin getting soggy. Then I cooked uncovered in the oven for about 10 minutes. The result was crisp chicken, with flavourful and very healthy sauce. the whole thing took about an hour end to end and was popular with Spencer.
