    In my opinion this is a no fail recipe. You can adjust any amounts of the vegetables, broth or noddles based on your liking but the overall taste is simple yet comforting on a cold dreary day. Served it with some homemade sourdough bread and it was delicious!

    I had leftover roast chicken + the stock I made from the carcass on hand and came here for a simple soup. I dug in the freezer for a sauteed leek + my jar of "Simon & Garfunkel" fresh herb blend to add and I did some eyeballing re the amount of broth and noodles to use. The result is a simple but lovely little pot of soup.

    Made with my own stock. Agree that it needs more stock relative to veggies and noodles. Easy, simple, and delicious.

    I made Ina's chicken stock, which was very flavorful, but a quick stock or even canned broth would probably be fine. The chicken needed longer to roast. There was a lot of chicken and noodles relative to broth - I'd prefer more broth. A good basic chicken soup.
