    A bit challenging to get the chicken as thin as needed and to fit more than 2 in the pan. A bit tedious but worth it! Light, fresh, yet filling

    My mom made this on the regular growing up and us kids loved it. I made it for my husband when we were first married and then trying many other things, totally forgot about this one.

    This is very quick and easy. Next time I might salt the chicken a bit more. My family didn't love the salad dressing so I might use a different vinaigrette next time.

    This crispy, flavourful chicken formed the awesome base of tonight’s dinner, I cut it back to 2 chicken breasts and because I had a small, almost empty jar of Dijon, I cracked my 1 egg into it & gave it a good shake before dumping it on its plate. I did not use her greens/vinaigrette tonight as I had grape tomatoes & fresh basil to use up - so I made a bruschetta mix with garlic & balsamic to spoon over the crispy chicken. I had left over Caesar dressing to use for a salad and some garlic bread ingredients to finish off ......we completely cleaned our plates.

    I cooked 3 chicken breasts which barely fit in a 14" pan. Needed a bit of extra oil for the edges to brown. Quite good, quick and easy. Nice with the greens.
