    I used some fresh sage and 1/4 tsp nutmeg instead of the saffron just because that is what I had on hand and it was delicious. Served it with some baked haddock.

    Used the instant pot to make the risotto. At the point that the stock, salt, pepper and saffron are added, I added the full 2 2/3 c stock and cooked at high pressure for 5 minutes, quick released. Used regular bacon in place of pancetta.

    This was very good! Easy to make. Made with Ina's Skillet Roasted Lemon Chicken.

    Roasted the squash a day ahead and reheated it in the microwave. Used regular bacon instead of pancetta. Quite good.
