    This was lovely. There was great intensity of flavor from cooking the mushrooms and bacon until caramelized before adding the rice. I couldn't get the three-grain mix so used all risotto rice - therefore needed one litre of stock. I crumbled some cooked black pudding on the top. A very satisfying, and reasonably quick, supper.
