Anglo-Indian sausage patties from Curry Easy (page 127) by Madhur Jaffrey

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute red onions for shallots. The book suggests using this book's recipe for "Garam masala".

Served with lime and coriander tzatziki and a chopped mixed salad. Good.

These were great. I shaped mine into burgers and grilled for 10 mins total. Served in burger buns with salad from our garden. 450 gr pork gave 5 burgers. This was my first attempt at mincing my own meat after buying the Kitchenaid Grinder & Sausage Stuffer attachment. We loved the less firm texture of the burger, which didn't contain egg or breadcrumbs. Very impressed so far.

Nice mildly Indian sausage patties. Good for weeknights. They do need something like a raita - luckily, this cookbook has quite a choice of them. I used the yoghurt with tomatoes and chickpeas. I think next time I'll use the courgette yoghurt as that's lighter and the patty is quite filling already.
