My grandmother's herbed pork chops (Grootmoeder's varkenskoteletjes met paddestoelen en spek / Côtes de porc aux herbes de ma grand-mère) from Everybody Eats Well in Belgium Cookbook: 250 Recipes from a Rich Culinary Tradition by Ruth Van Waerebeek and Maria Robbins

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I don't think my grandmother ever made pork chops this way, but I sort of feel she should have. Old-fashioned in a good way. However, the chops and the sauce did not interact much, they were basically two different dishes.
