    I used a bone-in loin end roast that was close to 4 lbs. Marinated for only about half an hour without the salt and it still turned out great. A simple and easy recipe that I will use again for any pork roast.

    I first made this in March of 1999 when my children were teenagers and hard to please. All of them swooned over this. In fact, my then 15-yr-old son told me he thought about it in school the next day and couldn't wait to have it for left-overs that night. That son is now 29 and he still requests this dish when he comes for dinner. Yes, this is just a fabulous dish that will please almost everyone. And it is so simple.
