    Can substitute fine sea salt for fleur de sel.

    When I have made these and precisely cut the logs (measuring and very vertical cuts), they come out of the oven with a slight raised edge. I haven't tried this yet, but I think a disk of something could be added to the tops -- maybe very dark chocolate, or caramel.
