Can substitute "Chile oil" recipe on P213 for store-bought chile oil, "Tofu pudding" recipe on P30 for store-bought tofu pudding, balsamic vinegar for Chinkiang vinegar, and unsalted peanuts for unsalted roasted soybeans. See recipe for variations and optional toppings.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Tofu pudding is pretty flavourless on its own, but with the sauce and toppings it is a triumph. Although it wasn't my intention to make this today, but it is a very happy outcome to a soy milk process that didn't go the way I intended. Very happy to make this.
