    This is an excellent recipe. I preferred this recipe over others because it used an egg yolk custard not a cornstarch custard. Go easy on the almond essence otherwise it will have a strong almond flavour. You only need 1/4 to 1/2 tsp. I replaced the sugar 1:1 with xylitol (finely ground) to make it a low carb gelato, but next time I would reduce the sweetener by half. I didn't bother to add the green food colouring.
