    Yes, I grew up on lard (and a farm). Here I used frozen spinach, substituted shallots for onions, added a bit of tarragon to the patties, then served simply with Kressi vinegar. So I moved the flavors suggested for the sauce into the patties and added my own touch of vinegar. I loved the results - a perfect foil to overdosing on root vegetable patties.
