    I made this sauce sour vide and it incorporated well but could have been a bit thicker. I added a few black peppercorns to the mix and once it was done I ended up using a bit of horseradish to make the sauce more unique. this helped because otherwise, it was too close to just adding ketchup to a nice piece of meat. I don't think that I would make it again because of this but it showed me that hollandaise sous vide might be the way to go.
