    I didn't have coconut milk on hand, so I sauteed the leek in coconut oil and substituted soy milk instead of coconut milk. Very tasty. Even my 15 month old ate it.

    One of my favorite recipes EVER. Can make it with cooked rice, heating everything together. Also make it with scallions instead of leeks.
