Cheese, ham and egg sandwich muffins (Croque madame muffins) from The Little Paris Kitchen: Classic French Recipes with a Fresh and Simple Approach by Rachel Khoo

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

The recipe says white bread, but I happened to have granary so used that. I thought these were a smidgy fiddly for a breakfast dish, and the result was tasty but not oh-my-god-amazing, to be honest I'd probably rather just make a traditional croque madame/monsieur rather than have it in muffin shape.

These little croque madame are baked in a muffin tin. They're easy and delicious.

Okay, it may be something of a stretch to equate these clever little egg muffins to a croque madame. A French classic these are not. But c’mon, they’ve got a certain je ne sais quoi.
