    I was using the thighs and legs for another dish, so I decided to try this. I had both breasts on the bone in one piece. Made a mixture of butter and Jane's Crazy Mixed Up Salt and rubbed that under the skin and all over. Then let it rest overnight in the fridge. I checked temp at 35 minutes, but it ended up taking closer to an hour (but I think my whole chicken was about 4.5 lbs to start and I kept the breast in one piece so that added cooking time). Sammy and I thought this was really good. The meat was flavorful. Would make again.

    The skin got super crispy. I made a compound butter with garlic, parsley and lemon zest, however, it did not flavor the meat too much. I made half a recipe and use the counter top oven, all 6 inside walls of the oven is now covered with chicken fat splatter.
