    I had half a package of Italian sausage to use up from another use and this recipe fit my needs. I made three changes- substituted spinach leaves for escarole, increased the grated Parmesan, and added oregano for flavor. Two of us liked the outcome. It is a hearty pasta dish, fitting for an autumn Meal. From start to finish, it took less than 30 minutes. Side note: recipe calls for red pepper flakes. Photo shows red bell pepper slices.
