    Husband said this was the best Caprese salad he’s ever had. As the recipe author notes, the quality of ingredients matters in this recipe because there are so few ingredients. Husband especially liked the fresh Whole Foods Mozzarella we used, saying it was lighter and had better flavor than what he’s had at restaurants. I liked the drizzling of EVOO and balsamic vinegar rather than a dousing. I used vine ripe tomatoes which were juicy but firm, as well as flavorful- a bit of luck in February here. Very fast side dish.
