    The pork chops got really tough cooking in the stock/wine. In the future I will sear the chops until just about done and tent with foil to finish cooking. Use stock/wine to deglaze pan, allow to boil until reduced, turn down heat, add cream/mustard, and then once mixed turn heat back up to medium to thicken. Saves time and meat texture. Otherwise this was a delicious recipe.
