    Loved this cake. Made without nuts due to allergies in one of the eaters. I used spelt flour and all purpose mixed and made up my own self raising flour using a combination I found online. Doubled the recipe to make 2 cakes and everyone at work loved it. I ran out of carrots so made up the difference with some golden beets from the garden. I really liked the spice in this cake. Will definitely make again.
