    This recipe makes a deep mince pie using muffin tins. The ratio of filling to pastry is perfect. I used the version of the recipe on his website, which uses a slightly different sweet pastry with no almonds. It's excellent; slightly difficult to work with, but very short and buttery, producing a crisp crust that doesn't go soggy even after several days. I used my own home-made mincemeat so didn't bother with the satsumas and apple. This will be my go-to recipe from now on.
