Lime-cashew rice pilaf (Limboo shaadum) from Betty Crocker's Indian Home Cooking by Betty Crocker and Raghavan Iyer

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I’m really surprised … Raghavan’s recipes are generally a resounding hit with me. I just don’t know how he expected chana dal (dried yellow split peas) to soften to an edible texture with one minute of stir frying! I will say that my chana dal was a bit old, so I’m not sure if fresher ones would work? Otherwise, this recipe was great as most of his recipes are. RIP Raghavan. ETA: In the leftover rice, the chana dal softens and is quite nice.
