    We enjoyed this very much, the chicken pieces were so tender. I cut them in cubes rather than strips. The lotus leaf was very easy to manipulate once rehydrated. Very simple and yet quite impressive in the presentation.

    I used parchment paper instead of lotus leaves to make three little flat "en papillote" burritos, which worked very well. Fresh shiitakes are an OK substitute for dried ones.
