Vegetarian 'gong bao chicken' (Gong bao di jing [Su]) from Every Grain of Rice: Simple Chinese Home Cooking (page 236) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I really liked this. The mushrooms came out of the fryer a bit weird - very sticky and in one clump - but once they were stir-fried it wasn't an issue. Excellent flavor. Makes a relatively small amount, needs lots of accompaniments.

Not a winner for me but I'd like to try again. I don't think the deep-frying process went the way it should have, given my results.

We really enjoyed this. I don't like peanuts so I subbed cashews, and I used dried chiles I had on hand instead of the Sichuan chiles, but otherwise followed the recipe as written. It was sticky, sweet and a bit spicy.
