Broad bean and snow vegetable soup (Dou ban xue cai tang) from Every Grain of Rice: Simple Chinese Home Cooking (page 244) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The photo of this dish has always intrigued me as it looks so wholesome, but snow vegetable and broadens aren't always easy to find. Recently I was at a new Asian market and they had both so off I went. I made as prepared except that I used about half the oil. Very nice little soup. You need a good homemade stock as we are really only talking a broad beans, stock, and snow vegetable here, so the stock must be good. Very easy to put together and the result is a lovely briny soup with a bit of tang and umami from the pickled vegetables and a the nice skinned broad beans to round it out. A winner for us.
