Soup with vegetables and meatballs (Yuan zi tang) from Every Grain of Rice: Simple Chinese Home Cooking (page 248) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

First time using winter melon and we quite liked it. It is mild in flavour but with a lovely broth and nice little meatballs it’s a winner. I would say season the meatballs well and consider adding a touch more mushroom. I also think more green onion is a good idea.

I used sliced carrots and cabbage as easy ingredients to substitute the winter melon. My family loved it.

This was enjoyable but not our favorite. It was our first time using winter melon and we weren’t all sold on the texture - soft and mealy, almost potato-esque. The soup itself was mild, and the meatballs were tasty, though we’d make them smaller if we repeated.

Easy and delicious. The meatballs were simple but flavourful even made with extra lean pork. I may one day be ambitious enough to try to shape them in the traditional manner but a small cookie scoop dipped in cold water worked perfectly. I made this with bok choy and enoki mushrooms.
