Spicy buckwheat noodles (Suan la qiao mian) from Every Grain of Rice: Simple Chinese Home Cooking (page 268) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute tamari soy sauce for light soy sauce.

This was really tasty and easy. I used 1 tsp of minced garlic, cut the chili oil by half, and added a few more pinches of sugar to get it to the right level of sweet and sour that I like (I have a sweet tooth). With some leftover roast chicken breast on top, this made the perfect dinner for two.

Made this last night with the Marinated Tofu from The Greens Cookbooks. I used the leftover marinade sauce from the recipe and added chile oil. Very simple and easy meal.

I substituted whole wheat spaghettini for the buckwheat noodles but the dish was still very tasty.

These were nice but I didn't get the balance of flavours quite right: a bit too much chilli oil and not enough saltiness. I wanted to serve them warm so didn't rinse them after cooking, but agree with other commenter who said this makes them a little gummy.

We love this noodle for its simplicity, yet very tasty. I've made the Chilli Oil, also from this book. Fabulous! There's a request from my family to make this noodle again.

Quick and easy recipe that would be equally good cold or hot. Make sure to rinse your noodles before tossing as I didn't rinse mine and they were a touch gummy. You definitely need the chilli oil to balance the sweetness. My oil is quite tame so I went with the full amount, plus I sauteed a little cabbage and added it to the dish.
