Hangzhou breakfast noodles (Cong you ban mian) from Every Grain of Rice: Simple Chinese Home Cooking (page 278) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute tamari soy sauce for light soy sauce.

Good recipe to have on hand when you’re craving carbs, but don’t have many ingredients or energy to cook. I used udon noodles.

This is delectable and I've made it countless times. The sizzling oil combined with the soy sauce creates a glaze for the noodles. Highly recommend using the Alkaline Wheat Noodles from Mala Market for this. So simple yet so good.

Far greater than the sum of its parts. The sizzling oil is the move, I think.
