    p. 253 - It was an Oyster Stout that inspired me to prepare this dish. A local craft brewery produces this punchy stout that’s brewed with PEI oysters and it seemed like the perfect partner for some briny mussels. I came across this recipe and the results exceeded my expectations. The splash of cream at the end is brilliant and really balances out the flavours of the dish. mr bc isn’t the biggest mussel fan and he loved this dish. Definitely a recipe I’ll prepare again and given how quickly this comes together, it would make a terrific company dish.
