    I didn't have shallots or tarragon, or quite enough mushrooms, so I cooked with one and a half red onions, a courgette as well as around 250g chestnut mushrooms...and cooked with some fresh thyme adding a handful of fresh parsley at the end. skipped the sherry, it was absolutely delicious and will do again
