      Carrots are best in winter. There is something about the coldness of winter that intensifies the flavour of carrots. How precious they are in their sweetness and affinity for a range of vegetable combinations. This soup is a winner.

      Parsnips are under-rated. It has something to do with the fact that they can be woody if they are too old or bought out of season.But buy them when they are in season and at their prime, and they are wonderful winter vegetables. For this soup I will often mix carrots and parsnips, or use parsnips alone. Either way it is a beautiful. warming, Winter soup.

      I used this soup as a basis for a soup to put in the freezer (zucchini glut) but it was so delicious I ate a bowl straight away.I included a fennel bulb with the zucchini, and didn't puree the soup or add cream. Delish!

      I didn't have shallots or tarragon, or quite enough mushrooms, so I cooked with one and a half red onions, a courgette as well as around 250g chestnut mushrooms...and cooked with some fresh thyme adding a handful of fresh parsley at the end. skipped the sherry, it was absolutely delicious and will do again

      Used soupmaker and although parsnips are quite fibrous the end result was very smooth. I possibly overdid the ginger as it was pretty spicy but in a good way. Will make again.

      I really love this soup, for a couple of reasons. The roasting of apples and carrots highlights their flavours, and it is a great soup for Autumn and Winter. Furthermore, my Father loved it. There can be no better recommendation that that. During his last years I would often make it and take it over for him in Winter. It’s an interesting soup – you might call it reminiscent of “English Curry” – that old fashioned notion of a curry that was somewhat sweet with its flavour with the gentle heat of spices. So the curry powder in this recipe with the sweetness of the apple and carrots is beautiful and a bit old fashioned. Blended soups per se are a bit out of fashion atm, so this one is a bit out of date. But still – absolutely divine.

      I made this soup again today, with lots of memories of my father. It is simply divine. I added a few things that needed using up to the roasting tray - half a green pepper, a lone chilli, a stick of celery, 2 small potatoes. Also added a good squeeze of lemon at the end. (I ate 2 bowls, but shhhhhh.)

      I used Baharat Spice instead of curry powder, added some new potatoes and juice of an orange. Delicious citrusy flavoured carrot soup. The yoghurt stirred in is a must!

While we are very familiar with all sorts of pasta dishes, the breads of Italy, the extraordinary range of vegetable dishes, and few soups besides minestrone have gained traction. This beautiful soup is very simple – just made with tiny pasta and broth. Gentle, Wintery and flavoursome, it can be made with a dark broth or one with a tomato base.

      A cold winter solstice demands a big pot of soup. Leaving out the pasta and cooking in the instant pot. A large pot for several days of comfort and warmth. UPDATE: A soup with an amazing flavour. I am always amazed at how well the instant pot cooks beans and soups. A new favourite soup.

      Here is another of my loved rustic soups. It is a health-boost in a bowl, this soup. I usually don’t make it until later in the Wintery cough-and-cold season, but here we sat, at the beginning of the coronavirus scare. It was early March 2020 when I made it this time, so I was putting attention to boosting the immunity of family and friends – and myself of course. Just call this one Immunity Soup - and I added turmeric powder to increase its effectiveness. You could add garlic also. This is a very easy soup to make, and the chickpeas can be cooked the day before if you wish. Tinned chickpeas can be used – just skip the instructions for cooking them.

      I made this soup one morning when I felt a strong need to nourish myself. It is tasty and the greatest ever welcome to the cold weather. The tahini in it is magic! It is also a great recipe to play with. When feeling stressed or in need of an immunity boost, I add turmeric, powdered ginger and fresh garlic.

      This soup is SO delicious – and makes everyone so happy when they eat it. I call it 13 Treasure Happiness Soup - the name comes from the 13 vegetables in the soup, and that wonderful warm, happiness feeling. Although from Provence, like many Nicois recipes there is a strong Italian influence. The soup is a close cousin to minestrone. There it is a summer soup, but the addition here of potatoes, pumpkin and sweet potato gives it that wonderful warmth for winter and early spring, and introduces truly wonderful textural combinations in every mouthful.

      Just made this again - we make it each winter/autumn/spring. It is simply glorious and joy-making. This time I added a few tiny lentils to the soup for beautiful broth as they melt into the soup. There are many similar recipes for this soup as it is a classic French dish, but this is the recipe that I love and stick to.

      An interesting and nice soup, especially when there are peppery, lemony salad leaves in a glut in the veggie garden. The cream is absolutely essential to tame the "greenness", and I crumbled blue cheese over the top of the soup. Delicious!

      A great soup for this time of year with cold mornings and nights. Replaced the beans with chickpeas. Made stock in the Instant Pot, then cooked the soup in the pot 2m HP, FNR. Delicious.
