    The filling is phenomenal, and will work well not only in the hand pies put in mini tartlets as well. I would use a firmer apple like a granny smith so the filling doesn't break down as much during baking. I cheated and used pre-made, pre-rolled pie crust with great results, although the pie crust recipe does come together quickly (I just failed at rolling everything out). Will make again.
