Dutch speculaas cookies (sometimes spelled speculoos, otherwise known as Dutch windmill or Biscoff cookies) from Eat the Love by Irvin Lin

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I have been trying all the Speculaas cookie recipes I have trying to find one that matches the ones we purchased in Michigan last fall that husband is still raving about. So far this one is the one that comes closest, especially in flavor to those bakery cookies. The spices are zingy and warm and the sugar flavor from the dark brown sugar gives them a much richer flavor than white sugar or golden brown sugar. I used my Nordic Ware Geocookie stamps and ended up with 18 large cookies that I baked for 16 minutes. Next time I will try to make the cookies smaller to try to get a more uniform crispness.
