    The pilaf is very good. If cooked longer than the recipe calls for, in the bottom of a dutch oven, you get that crispy layer of rice on the bottom. Good flavor. You can pair it with a lot of different meat dishes not just the pork. You can toast a different nut instead of pistachios, I did.
