    This book is not flashy, but it has truly some of the best, accurate, and varied recipes, you can find, even if many are complex or advanced with a lot of ingredients. There are sauces and techniques for asian, mexican, italian, etc dishes that I have learned so much from. I would not have named the book sizzling skillets since its not a book about skillets or even one pot wonders.

      Loved this. This is a good example of Cucina Povera cooking. You can sub or add anything from your pantry. Cooked as instructed this is delicious and lasts as leftovers for a few days.

      The pilaf is very good. If cooked longer than the recipe calls for, in the bottom of a dutch oven, you get that crispy layer of rice on the bottom. Good flavor. You can pair it with a lot of different meat dishes not just the pork. You can toast a different nut instead of pistachios, I did.

      The depth of flavor is wonderful, due to the building of a broth, and then the red curry paste, fish sauce. I highly recommend Blue Dragon brand of curry paste and would steer you away from the more common Thai Kitchen brand you will find.

      I have made this recipe for years. Last night I had a block of tofu that I needed to use, so I made this recipe with firm tofu with great success. I pressed the tofu, cut it into cubes and marinated just like I would have done with the chicken. After draining the marinade off, I put the tofu on a sheet pan lined with parchment paper and baked for 20 minutes at 425. The oven method gave it nice even browning. I added the tofu to the vegetables before adding the sauce. Will make again with tofu.

      I've made this in the past and found the recipe again today. Very flavorful, easy shrimp dish. The ginger adds a nice heat that combines well with the pepper. I peeled the shrimp completely due to one child who complains endlessly if I don't.

      This recipe is written for a slow cooker and it worked well, cooking 4 hours on high. I’d make it again, although relatively short cooking times like this somewhat defeat the purpose of using a slow cooker, in my opinion.

      Very good, but the liquid was unappetizing by the end of the cooking, with all the fat and gristle. I drained it off and then used a bbq sauce from ina garten.

      Good stew - I substituted one large bok choy for the baby bok choys as that was what was available. Nice combination of spicy, sour and salt flavors.

  • Cheese enchiladas with a smoky red chile sauce

      Having learned authentic mexican cooking from Rick Bayless youtube videos, i cooked this and it is a good example of an enchilada rojas, using good chili technique to make the sauce. The cheese can be substituted but keep it mexican oregano and mexican canela cinnamon for authentic results, it does matter.
